Philippe Pacalet Ruchottes Chambertin 2013

The Ruchottes-Chambertin Grand Cru of Domaine Philippe Pacalet is produced from grapes from south-east facing vineyards with a sunny and cool microclimate. The soils have a limestone-clay composition and rest on a rock of limestone nature. The screws have an average age of 45 years with a yield of 30hl/ha. Fermentation takes place with indigenous yeasts, without temperature control. The wine matures in wood on its own yeasts for a period of 16 months.
