Silex is the fruit of old vines between 25 and 60 years old that give Sauvignon Blanc suitable for aging. The harvest takes place in a very short time at optimal ripeness and with a lot of staff. The use of selected yeasts in their own vineyard, static decantation and long aging on the yeasts without racking, remain the basis of an absolute search for the crystalline expression of Sauvignon Blanc - enhanced by a precise aging in wood, in barrels with a capacity greater than barriques, 320-liter "cigares" or 600-liter "tonnes". Timid and austere in its youth, the Silex cuvée then highlights an exemplary purity and aromatic complexity, a lot of freshness, a beautiful balance, richness, density, a crystalline material and a remarkable persistence. It expresses a unique aromatic universe, revealing notes of zan, scents of white flowers and hints of Tarragona root... Its thin and taut profile envelops its density and its vigorous richness until the finish. It is a great wine for aging, chiseled and tonic, which requires at least five years to reach the right expressive harmony. È senza dubbio la cuvée più ricercata e richiesta dalla tenuta. Silex è il frutto di vecchie vigne di età compresa tra 25 e 60 anni che donano dei Sauvignon Blanc adatti all’invecchiamento. La vendemmia avviene in tempi brevissimi a maturazione ottimale e con molto personale. L'utilizzo di lieviti selezionati nel proprio vigneto, la decantazione statica e lungo affinamento sui lieviti senza travasi, restano alla base di una ricerca assoluta dell'espressione cristallina del Sauvignon Blanc – esaltata da un preciso affinamento in legno, in botti di capienza superiore alle barrique, dei “cigares” da 320 litri o dei “tonnes” da 600 litri-. Timida e austera nella sua giovinezza, la cuvée Silex mette poi in luce una purezza e una complessità aromatica esemplari, molta freschezza, un bell'equilibrio, ricchezza, densità, una materia cristallina e una notevole persistenza. Esprime un universo aromatico unico, che rivela note di zan, profumi di fiori bianchi e cenni di radice di Tarragona... Il suo profilo sottile e teso avvolge la sua densità e la sua vigorosa ricchezza fino al finale. È un grande vino da invecchiamento, cesellato e tonico, che richiede almeno cinque anni per raggiungere la giusta armonia espressiva.
