Cà del Baio Barbaresco Asili Riserva 2018 is an elegant and complex red wine, created from the Nebbiolo grape from the iconic Asili vineyard in the heart of Barbaresco. This Riserva edition highlights the depth and aging potential of the wine, and is only produced in vintages where quality reaches the highest standards. The Asili vineyard is historically known for its unique soil and microclimate, which gives the wine a special finesse and character.

Flavor profile
The wine has an intense ruby red colour that can develop light garnet nuances over time. On the nose, Barbaresco Asili Riserva offers complex aromas of ripe cherries, rose petals, licorice, dried herbs and subtle spices that elegantly reveal the distinctive character of the terroir. The taste is silky and harmonious with balanced tannins, where layers of fresh red fruit are combined with nuances of leather, tobacco and a touch of forest floor. The finish is long and persistent, with a refined minerality and a beautiful structure that develops further with aging. The wine has significant aging potential and will develop greater depth and complexity over the next decade.

Vinification
The Asili hill is known for its compact, calcareous soil and optimal sun exposure, which gives the grapes perfect ripening conditions and great finesse. The grapes for this Barbaresco Riserva are carefully handpicked in early October, when they have reached ideal ripeness. After a gentle pressing, the wine undergoes traditional vinification with long maceration on the skins to extract maximum color and aroma. The wine is then aged in large Slavonian oak barrels for several years, giving depth and elegance, before being bottled and further matured before release.

Food & Dining
Cà del Baio Barbaresco Asili Riserva 2018 is an excellent choice for red meat dishes, game, mushroom-based dishes and mature cheeses such as Parmigiano Reggiano or Pecorino. Serve at approx. 16-18 °C and preferably after 1-2 hours of decanting, so that the wine's full aromatic potential unfolds.

Producer
Cà del Baio is a respected family-owned winery located in the Barbaresco area, where the Grasso family has been producing wine for four generations. The winery has achieved great recognition for their work with Nebbiolo, especially from the famous Asili and Pora vineyards. Over the years, Cà del Baio has received high praise from international wine writers and is considered one of the leading producers in the region, combining respect for tradition with modern winemaking.
