The production of white wine at Chateau maurgaux dates back to the end of the 17th century
The cellar master at that time tells how he was one of the first to separate the white grapes from the red ones during the winemaking. Sold in the 19th century under the name of "Chateau Margaux vin de Sauvignon", it has existed under the Pavillon brand "Pavillon Blanc du Chateau Margaux" since 1920 and its label has not changed since that date.
The 11 hectare vineyard is composed of only Sauvignon Blanc. It is located on a very old plot of the estate that had long been planted with red grape vines and then dug up due to the high risk of spring frosts. The production techniques, as well as the selection have been completely revised since 2009/2010 in order to reach a higher level of excellence; only 1/3 of the harvest is bottled, the remaining 2/3 are sold in bulk
Thus the quantity of Pavillon Blanc has been significantly reduced. Today it benefits from the most modern installations in the new cellar designed by Norman Foster
The finesse, complexity, richness and length of Pavillon Blanc are incomparable for a wine produced from 100% Sauvignon. The most recent vintages, especially since 2017, have opened new horizons in terms of quality, aging potential and a style that has become more mineral and complex. A significant part of the harvest is bottled in magnum format which creates optimal aging conditions
