The vinification process involves the grapes from each individual vineyard undergoing fermentation, maceration, and aging in wood for 12 months separately. This is followed by blending and a further 18 months of maturation in wood. In 1937, Giovanni Gaja, Angelo's father, decided to create a clearly visible and recognizable label for his wines with the name "Gaja." Upon tasting, it displays a ruby red color. All’esame organolettico si presenta di colore rosso rubino. Il profumo è intenso e da profonda meditazione; ai sentori floreali che rimandano alla rosa di macchia subentrano note di piccoli frutti rossi e spezie quali liquirizia ed erbe aromatiche. Il gusto al palato è elegante e potente allo stesso tempo, equilibrato e con tannini vellutati. Finale lunghissimo.
