A blend of Pinot Noir (85%) and Pinot Beurot (15% - an older Burgundian grape variety that shares ancestry with Pinot Gris) from over 100-year-old vines in Mercurey in Burgundy.
Biodynamically grown and organically certified.
Harvested in small boxes, partially de-stemmed, trampled with subsequent maceration for 15 days. Spontaneously fermented and aged for 14 months in wooden barrels.
The bottle with a bit of sulphur.
