Aurore & Florian Laval Symposium

Magnificent champagne of 60% Pinot Noir and 40% Pinot Meunier from Boursault in Champagne. 2020 base and disgorged in 2022. Dosage is 3.4 g/l, extra brut.

The wine is allowed to ferment with the naturally occurring yeast from the cellar and grape skins, primarily in steel and a little in barriques. No malolactic fermentation, but 16 months in casks and steel together with the lees.

From 2019, Aurore and Florian have taken over from their father, Michel Laval, and they continue to work manually and according to organic alternatives in the field.
