Aurélien Lefort's burgeoning interest in wine took him away from Paris and past biodynamicist Michel Auger in the Loire and Patrick Bouju in Auvergne, where he moved in 2011, specifically to the village of Madriat.
To begin with, Aurélien Lefort set about restoring wild fields that had either been abandoned or polluted. Today, it has become three hectares of healthy plots, each of which gives a very low yield. The soil here is quite different from the winemakers further north. The subsoil is less volcanic and is buried by various types of clay as well as quartz and granite. The vineyards are planted with a wide variety of varieties, some of which are around 120 years old. This includes Pinot Noir, Gamay d'Auvergne and Chardonnay, each of which matures at its own pace and is harvested accordingly.
Aurélien Lefort has turned some of the work in the cellar upside down and lets the whole bunches macerate longer than the wine is allowed to age. He succeeds in this without too much extraction by pressing the must directly into small tanks. It affects the wine in a way not unlike macération carbonique but without the addition of CO2. All done without the addition of sulfur at any time. By the way, Aurélien is originally a draftsman and illustrator, which is why he is of course the creator of the wine's labels.
In the cellar under the house, Aurélien fills quite a few barrels depending on the harvest, which some years can be badly affected by hail and frost. When you consider the limited quantities of Aurélien Lefort's wines, along with their incredible purity, depth and intensity, you have to count yourself lucky to grab a bottle when you have the chance.
