Waris-Larmandier Racines de Trois
/ #42718549A trinity of a champagne from three different areas in Champagne, respectively. Côtes des Blancs, Montagne de Reims and Côte des Bar, three different grapes, 60% Chardonnay, 30% Pinot Noir and 10% Pinot Meunier and produced by the three siblings who have taken over the management of the paternal domain.
There is minerality and structure from Chardonnay, elegance from Pinot Noir, the fruit from Meunier and then the classic virtues from the long lees on the lees. Really nice entry level from Waris-Larmandier. and good balance between minerality, fullness and fatness.
Fermented in steel and demi-muids from Burgundy. Natural malolactic fermentation and the wine ages on its own for 6 to 18 months followed by 24 to 38 months on the lees.
Dogorged December 2022 and dosage is 9 g/L (broken).
Certified organic and biodynamic, where regenerative long-term use is also practiced on the land, and low intervention in the cellar.
