NV Grand Cru champagne from Pehu Simonet in Verzenay.
The champagne is a blend of 70% Pinot Noir and 30% Chardonnay from various Grand Cru fields. Part of the wine has lain in barrique, while the rest has lain in steel, both for 30 months.
The work in the market takes place according to ecological principles, and in some of the fields biodynamic features are being experimented with.
