VINIFICATION: The grapes are destemmed and placed in concrete vats. They are pressed twice daily to ensure good extraction. The fermentation temperature exceeds 32 degrees Celsius. Maceration lasts 4-5 weeks, allowing the tannins to polymerize.

BOUQUET: Raspberry, blackberry, walnut and licorice emerge on the nose
