Le Clos Erasmus 2005 est issu de trois parcelles de vignes initialement aménagées en terrasses par les Grecs. L'assemblage actuel est composé de 85 % de Grenache et de 15 % de Syrah, avec pour objectif à long terme l'élaboration d'un vin 100 % Grenache. Ce vin a été élevé 18 mois en fûts de chêne français neufs. Il est extrêmement parfumé, avec des arômes de pierre concassée, d'ardoise, de cannelle, d'épices douces, de cassis, de kirsch, de myrtille et de cerise noire sauvage. Peut-être un peu plus fermé que le 2004, il offre en bouche une minéralité liquide qu'il faut goûter pour le croire. Opulent, harmonieux et exceptionnel sont des adjectifs qui ne rendent pas pleinement justice à cette extraordinaire réussite œnologique. Dans un monde idéal, les acquéreurs auraient la patience de le conserver en cave pendant 10 à 15 ans, mais ce sera un véritable test de patience.
