Each grape variety, which is handpicked, is transported to the presses in less than 15 minutes to prevent early oxidation or fermentation. After the sorting table, each grape variety is pressed separately and softly, as only the first pressing, "mosto flor" (free-flowing juice) is used. The winery uses Inertys technology in the presses, which protects the must against oxidation during pressing. Second fermentation in bottle.

This wine has aged at least 24 months on the lees. Every year, poignettage (stirring of the bottle) is carried out, which causes the yeast to mix again with the wine. Because of this, sparkling wine is enriched with aromas and flavors. Manual clarification in desks.
