Philipponnat Champagne Grand Blanc vintage 1989 is a "champagne méthode champenoise" wine produced by Philipponnat in the year of the 1989 harvest sold under the denomination Champagne Aoc. Traditional vinification, which avoids premature oxidation. Partial malolactic fermentation for the wines in stainless steel tanks, malolactic-free vinification of the wines elaborated in wood. Elegant wine, which maintains the balance between freshness, floral aromas and vinosity. "Extra-brut" dosage (4.25 g/l) which preserves the purity and nobility of its origin. Aging from seven to nine years to obtain the maximum complexity of the wine and bring out the secondary and tertiary aromas, signs of prolonged aging on the lees. Rare bottle of Champagne Dom Ruinart Rosè from 1986 also accompanied by the original box Fascinating on the nose even if not very intense, designed by fine fruity sweetness (raspberry) in a simple but very fresh context, so much so that it does not make one think of the 27th birthday. Even the taste is rather simple, that is immediate, very straight, still with a very delicate fruitiness. It seems to want to sacrifice complexity for accessibility. On the other hand, the vintage was what it was, so in this it proves to be very consistent.

Rare and fantastic bottle of Champagne Cristall Louis Roederer from 1969. Amazing condition despite being from 1969 More developed than the '66, which this wine closely resembles. The colour, the foam and the explosive nose are perfect. The flavor is tremendously rich and fruity, with a luxurious, fat finish.

100% Chardonnay udelukkende høstet fra Grand Cru marker på Côtes de Blanc. 5% af vinen fadgæres (33% nye fade) og modner efterfølgende i 4 måneder inden den endelige cuvée sammenstikkes, tappes på flaske og efter den fornyede gæring modner mindst 108 måneder frem mod disgorgement og en efterhånden beskeden dosage.
