Made Sous voile like vin jaune, which gives a characteristic, oxidative wine with great depth and minerality. It is a wine with nutty, chemical character and great concentration
Aged 28 months in cask without being topped up and minimal interference. 45-year-old vines are the cornerstone of this wine. Made with natural yeast and no added sulphur.
