Cultivation: with about 3 hectares of vineyards in Avenay val d'Or on the mountains of Reims, the vines are cultivated according to the dictates of bio-dynamics (certification obtained in 2015). On clay-limestone soils the cultivation of vines (average age between 50 and 70 years) is done in the meantime by favoring natural grassing and using herbal teas and decoctions of plants which for over 20 years have totally replaced the use of herbicides, insecticides and synthetic fungicides.
In the cellar: vinification in steel, unfiltered, unclarified, passage to natural cold, without added sulphites, manual remuage, all the wine is aged in Champenois oak barrels, resting to the accompaniment of classical music. Rest on the lees for at least 36 months.
Characteristics: intense straw yellow color almost golden, with a fine and elegant nose, with hints of delicate fruit, nice delicate minerality, hints of vanilla, pastry, licorice and spices. A great balance to the taste between freshness and softness, full and of great persistence.
Pairings: a gourmet champagne of great value and ductility to be enjoyed throughout the meal.
