Smaller lot with two champagnes.
Vincey Interlude no3: Blanc de Blancs from old vines, biodynamically grown, in Grand Cru vineyards near Oger and Mesnil-sur-Oger. Made from a blend of the 2021 harvest (50%) and reserve wine (50%). Pure terrior champagne.
Natural fermentation in used barrels. No filtration, no fining, no malolactic fermentation, no dosage.
No more than 3500 bottles to the world.
Laval Symposium: Magnificent champagne of 60% Pinot Meunier and 40% Pinot Noir from Boursault in Champagne. 2021 base and disgorged in 2023. Dosage is 2.2 g/l, extra brut.
The wine is allowed to ferment with the naturally occurring yeast from the cellar and grape skins, primarily in barriques, without undergoing malolactic fermentation.
As of 2019, Aurore and Florian have taken over from their father Michel Laval, and work continues to be done manually and according to organic practices in the field.
Perfect bottles and always stored properly.
