“De Veo” is obtained from three different grape varieties: Sagrantino, Sangiovese and Montepulciano, participating respectively with 65%, 25% and 10%. They come from vineyards located at an altitude of 400-430 meters above sea level, near San Valentino, Pagliaro and Cerrete. The soils are predominantly clayey and silty, stratified alternating with river pebbles. After the manual harvest, the bunches are transported to the cellar, where the skins are separated from the stalks during the pressing phase. A 36-day maceration precedes the maturation phase, which consists of a period of 20 months in stainless steel containers, 10 months in large wooden barrels of 20 quintals and finally 30 months of rest in the bottle.

“De Veo” è ottenuto da tre varietà di uve differenti: Sagrantino, Sangiovese e Montepulciano, partecipi rispettivamente con il 65%, il 25% e 10%. Esse provengono da vigneti collocati ad un’altitudine di 400-430 metri sul livello del mare, presso le località San Valentino, Pagliaro e Cerrete. I terreni sono prevalentemente argillosi e limosi, stratificati in alternanza a ciottoli di fiume. In seguito alla vendemmia manuale i grappoli vengono trasportati in cantina, dove in fase di pressatura avviene la separazione delle bucce dai raspi. Una macerazione di 36 giorni precede la fase di maturazione, che si compone di un periodo di 20 mesi in contenitori di acciaio inox, 10 mesi seguenti all’interno di botti di legno grande da 20 q.li. e per finire 30 mesi di sosta in bottiglia.
