Taittinger uses exclusively Chardonnay in Comtes de Champagne, from only the best Chardonnay grapes from Grand Cru vineyards in the Côte des Blancs.
After harvest, the grapes undergo a gentle pressing, from which only the finest must from the first pressing is used. Fermentation takes place in stainless steel tanks at controlled temperatures. It is worth noting that Taittinger, unlike some other champagne houses, only uses oak barrels in the majority of their wines, which gives their champagnes a clean and clear profile.
Comtes de Champagne is aged on the lees for up to 10 years, giving the wine a beautiful complexity and creamy character. The long aging in the bottle creates notes of bread, brioche and nuts, which harmonize with the wine's fruity and floral notes. The traditional bottle fermentation (méthode champenoise) is also an important part of the process, where the secondary fermentation creates the champagne's gentle bubbles.
