Amarone della Valpolicella Le Poiane 'Bolla' 2020

An Amarone designed to be enjoyed in its full expression of the fruit and capable of representing the Valpolicella Classica and its historic varieties, since the first production dates back to 1950.
Starting in January, the dried grapes are destemmed, pressed, and placed in fermentation tanks. Alcoholic fermentation is conducted at a controlled temperature, and maceration is managed to preserve the fruitiness of the grapes and achieve an intense yet controlled extraction of tannins. Malolactic fermentation takes place partly in small wooden vats and partly in 4,000-liter barrels.
The wine ages for approximately 24 months, partly in small, newly-used French and American oak barrels and partly in Slavonian barrels. It then ages for at least 3 months in bottle before being released for sale.
Intense ruby red in color. The nose stands out for its notes of wild berries and cherries. The palate is dominated by fruity and spicy notes, with a long and persistent finish.
Recommended with: roasts and grilled meats, game, braised meats and stews. Rich and flavorful first courses.
It is the ingredient of one of the most refined dishes of the Veronese area, risotto with Amarone.
